Mmmmm… dinner. This is one of our favorite summer dinners because it takes only 10 minutes to make. The key is in the tortilla. You put a few tablespoons of olive oil in a hot frying pan and fry up flour tortillas, browning them on each side. Yum. Then add your favorite ingredients on the crispy shell. My faves include black beans, corn, tomatoes, avocado, cilantro and a dash of salsa. Deeeelish.
