Jamie and I joined a CSA this summer, which means that we get a box full of vegetables every Thursday that we either need to eat through, or feel guilty as hell about when we throw it out. So the short story is that we are eating a TON of vegetables these days. This is one of the many salads from that particular box that was full of fresh butter lettuce, arugula, spring onions, spinach, garlic, blue potatoes, radishes and kohlrabi. We’re like a couple of rabbits over here with all these veggies. Salads, soups, stir fries — you name it, we’re making it. Oh! But if anyone has any tips on the arugula, let me know. We have ways of eating a little, but I have a huge bag of it to get through before Thursday, and I’m a little stumped.
