It hit 77 degrees today! So we made our favorite summer meal — veggie tacos. Tonight I mixed it up and made the filling more of a salad with the tortilla on the side. Should you want to make them yourself, and I highly suggest it, the recipe is below.
Ingredients: Tortillas, corn, black beans, cherry tomatoes, avocado, cilantro and your favorite salsa. Jamie also likes to add chicken and/or shredded cheese to his.
The best part of this dinner though is the tortillas. You heat 1-2 Tbsp olive oil in a pan, and then brown each side of the tortillas to give them both warmth and crunch. You can then either fold your own ingredients (mine are above) into the tortilla, or serve the tortilla on the side. Enjoy!
